Bunless Chicken B.L.T

Serves: 4 people
Note: you only need 20 minutes during the day
or week to prepare the chicken.
What you need
4 Chicken breast.
8 slices of bacon. (you can use microwave bacon)
1 cup baby spinach. (roman lettuce is a great substitute
for spinach)
2 Tablespoons of Basil. (yes dry basil will
work)
2 Tomatoes cut into 8 slices. (I use vine ripened
or Roma)
Salt and Pepper to taste.
Mayonnaise. (can be left out, if desired)
Extra Virgin olive oil or Pam cooking spray.
Instructions
- Season chicken with salt, pepper, and basil on both sides.
- Heat large skillet on medium heat. Add Extra Virgin Olive Oil or Pam Cooking Spray and chicken breast to skillet.
- Cook Chicken on Medium heat 10 minutes on each side or until chicken reaches proper cooked temperature.
- Remove chicken from heat, let rest. Once chicken has cooled, about 10 minutes, take one chicken breast at a time (use a sharpen knife an cutting board) turn chicken breast on side and make first cut into the center of chicken, you want the chicken breast to have a sub bun appearance. (Reference photo above) Make sure not to cut too far into the chicken or else you will lose the shape. Repeat this step for each chicken breast.
- At this point if you are preparing this meal you can place the sliced chicken into the refrigerator. The chicken will be ready when you need it.
- To finish this recipe start with the mayonnaise use butter knife and spread mayonnaise inside the chicken breast. Add Spanish (or Roman), Tomatoes, and Bacon inside the chicken. Add as much of each of these ingredients or subtract the ingredients as desired. Plate and serve.
