Bunless Chicken B.L.T


I am not sure about you, but I love carbs. Most of my recipes will either have some form of carbs, or I will suggest that you add carbs to the side. Shockingly enough I do have several healthy recipes up my sleeve. Bunless Chicken B.L.T is a perfect quick dinner. So quick you can have it sitting in your refrigerator waiting for you when you get home. This recipe is compatible for those of you who are Sunday weekly meal preppers, busy moms or dads, and the rush to eat because class is in one hour college students. We are a society of busy bees, it can be challenging to slow down, and sometimes a pop tart just has to do. Bunless chicken B.L.T is equal to having a fast food restaurant at home. I found this recipe on Pinterest two years ago, and I have made this recipe multiple times since. 

Prep Time 15 minutes
Cook time: 20 – 30 minutes
Serves: 4 people
Note: you only need 20 minutes during the day or week to prepare the chicken.

What you need

4 Chicken breast.

8 slices of bacon. (you can use microwave bacon)

1 cup baby spinach. (roman lettuce is a great substitute for spinach)

2 Tablespoons of Basil. (yes dry basil will work)

2 Tomatoes cut into 8 slices. (I use vine ripened or Roma)

Salt and Pepper to taste.

Mayonnaise. (can be left out, if desired)  

Extra Virgin olive oil or Pam cooking spray.

Instructions
  • Season chicken with salt, pepper, and basil on both sides.
  • Heat large skillet on medium heat. Add Extra Virgin Olive Oil or Pam Cooking Spray and chicken breast to skillet.
  • Cook Chicken on Medium heat 10 minutes on each side or until chicken reaches proper cooked temperature.
  • Remove chicken from heat, let rest. Once chicken has cooled, about 10 minutes, take one chicken breast at a time (use a sharpen knife an cutting board)  turn chicken breast on side and make first cut into the center of chicken, you want the chicken breast to have a sub bun appearance. (Reference photo above)  Make sure not to cut too far into the chicken or else you will lose the shape. Repeat this step for each chicken breast.
  • At this point if you are preparing this meal you can place the sliced chicken into the refrigerator. The chicken will be ready when you need it.
  • To finish this recipe start with the mayonnaise use butter knife and spread mayonnaise inside the chicken breast. Add Spanish (or Roman), Tomatoes, and Bacon inside the chicken.  Add as much of each of these ingredients or subtract the ingredients as desired.  Plate and serve.  
Note: this dinner is meant to be served cold.
