Bob Evans Potato Soup
With our mini heat wave in Michigan coming to a
close end I thought everyone would enjoy a potato soup recipe. If you have yet
to have Bob Evans potato soup, you are in for a treat. If you have had it before
then you will be able to compare this copycat recipe I found on Pinterest. I
like to cook all soups in a crockpot if necessary; therefore, this recipe will be tailored
for crockpots. I hope you guys
enjoy this recipe like I have, but if you have any ideas on how to make it

Prep
Time: 30 minutes
Cook Time: 4 hours on low: Give best judgement
based on how hot your crockpot cooks. With one of my crockpots I cooking everything
on warm because it cooks at a warmer level. (warm = low on that crockpot)
Serves: 6 (Double the batch for more soup)
What You Need
- 1 Can 10.75oz Condensed Cheddar Cheese Soup.
- 1 Can Chicken Broth.
- 1 Pound grated Cheddar Cheese.
- 4 Cups of Whole Milk
- 2 Tablespoons Butter.
- 2 Tablespoon Cornstarch.
- ½ Teaspoon Salt.
- ½ Teaspoon Black Pepper.
- ½ Teaspoon Onion Powder
- ½ Teaspoon Garlic Salt.
- 7 Medium potatoes, diced and boiled first.
Toppings
Real Bacon Bits
Chives or Green Onion chopped into small
pieces.
Instruction
Add cheddar cheese soup, ½ of the broth, 1 cup
of milk to crockpot and stir till smooth.
Add grated cheese and remaining 3
cups of milk, stir in cornstarch with the rest of the broth, salt, pepper, onion
powder, garlic salt, butter, and potatoes. Make sure to check on and stir every once and
a while.
Once soup is hot enough serve and top with
bacon bits, and chives or green onions.
Note: Serve Hot.
