Crockpot Cheese Tortellini Soup
This by far is one of my most
requested soups, and the easiest soups to make. My cheese tortellini recipe is a
simple, easy, and feeds a lot of people.I love crockpot cooking, you mix it
and leave it. I love starting a soup in the morning and having dinner ready by
the time I get home from work. I sadly this was pinned on my pinterest board for over a year. I am so glad I choose to make this recipe. That is why I choose to post this recipe sooner rather than later.
Prep time: 25 minutes
Crockpot temperature: Low
Cook time: 4-6 hours.
Serves 4-6 people.
What you need
- 1 -19oz bag of frozen cheese tortellini. (Store brand saves you money 90 percent of the time)
- 1 small bag of fresh spinach. (Normally I put in about 2-3 handfuls of spinach, no need to chop spinach. The amount of spinach is up to you personally)
- 2 -14.5oz cans of Italian style diced tomatoes, drained. (Sometime I like to buy the basil, onion, and pepper tomato blend)
- 1 –Block of cream cheese. (I use Philadelphia cream cheese, but you can use store brand. You can also substitute with low fat cream cheese)
- 1 lb. package of chicken sausage. (I have used pork sausage, just as good)
- 4 cups of unsalted chicken broth.
- 1/2 block of cream cheese.
- Salt and pepper to taste.
Instructions
- Brown the sausage, then dice the sausage into smaller cubes.
- Dice up cream cheese into smaller cubes, add to crockpot.
- Add frozen cheese tortellini, spinach, drained diced tomatoes, unsalted chicken broth, salt, cream cheese and pepper into crockpot, mix.
- If soup is thin, leave lid off for the last half hour of cooking to thicken.
