Panera Inspired Broccoli Cheese Soup
I love Panera , so when I went hunting for an
inspired soup recipe, I was not disappointed. A quick, easy, and delicious
recipe. Take 30 minutes out of your day, and you will thank me when you taste
this recipe.
Prep Time: 10 minutes.
Cook Time: 15-20 minutes.
Serves: 3-4.
What You Need
- ¼ Cup Unsalted Butter.
- ½ Cup Diced Onion. (Spanish, or yellow)
- 1 Cup Shredded Carrots. (I cut the thin sliced carrots into fourths, so they were not so long.)
- 2 ½ Cups Broccoli Florets, Chopped Small. (Add more or less. Personal preference)
- 1 ½ Cups Milk (any percentage your choice)
- 1 Cup Heavy Whipping Cream.
- ¼ Cup All-Purpose Flour.
- 1 ½ Teaspoon Salt.
- ½ Teaspoon Pepper.
- Pinch of Crushed Red Pepper Flakes. (Personal preference on amount)
- 2 Cups Shredded Cheddar Cheese.
Directions
In a large pot over medium-high heat, melt
butter. Add onion, carrots and broccoli. Cook till the veggies are soften,
about five minutes. (The amount of time needed depends on how thick you have
slice your veggies.)
Slowly ass in broth, milk and cream. Sprinkle
with flour and add salt, pepper, and red pepper flakes. Continue stirring and
heating over medium-high heat until thickened. This will take about 10-15
minutes.
Once thick, add cheese and stir until melted
and smooth. Serve soup.
Note: Serve Hot.
