Double Chocolate Zucchini Muffins

know. . . I know, this sounds weird and slightly unappealing; however, these are
AMAZING!
My
wonderful Mother In-Law made these a few nights ago, and I kept going back for
more. ..and more, and so on. If you are on a healthy diet or want a healthier
version to battle a sweet tooth this is your go to. This is a “muffin” yet
it tastes just like a cupcake, and you won’t have the urge to add the frosting.
Prep

Time: 15 minutes.
Oven
Temp: 350.

What
You Need
½
Cup melted butter
½
Cup of Cocoa powder
1
¼ Cup All-purpose flour
1
Teaspoon Baking Soda.
1
Teaspoon Cinnamon
¼
Teaspoon Salt
1
Cup Sugar
1
Eggs plus 1 Egg Yolk
1
Teaspoon Pure Vanilla Extract
2
Cups Fresh Grated Zucchini
2/3
Cups Chocolate (or go crazy)
Directions
Preheat
oven to 350. Line muffin pan with liners. (environmental friendly silicone liners are fine)
In
a large bowl whisk together sugar, eggs, and egg yolk until smooth. About 1
minute. Add melted butter and vanilla and mix until smooth. Add zucchini, then
add flour mixture in slowly. Fold in chocolate chips. Mix until smooth.
Transfer
batter to muffin liners half way, or a little over.
Bake
for 15 minutes.
Let
cool and for a few minutes, and transfer to cooling rack.
