Buffalo Chicken Zucchini Boats
Zucchini is amazing, and buffalo anything is
always delicious. A great combo, easy, simple, and can be eaten cold, or
reheated nicely. Click here for original recipe.
Prep Time: 10 minutes.
Cook Time: 42 minutes.
Oven Temperature: 400
Serves: 6-8
What You Need
4 Medium Zucchini. (roughly 1 ¾ pounds)
1 Pound Chicken. (if you like ground chicken,
can chicken, or shredded chicken)
1 Cup Shredded Mozzarella Cheese.
½ Cup Buffalo Wing Sauce. (not hot sauce, hot
sauce is too thin)
Directions
Preheat oven to 400 degrees F. Spray
a baking pan with cooking spray.
Use a large skillet over medium-high
heat. Add the chicken and break it apart with a wooden spoon. (depending on
what chicken you use cook according to instructions) Cook for 7-9 minutes,
until the chicken is cooked through, stirring occasionally.
Remove the skillet from the heat.
Stir in the buffalo wing sauce. (let rest)
As the chicken is resting, cut the
zucchini in half, lengthwise. Use a spoon to scoop the seeds and center out of
each zucchini half, leaving a ¼ inch thick zucchini boat. Place the zucchini in
the baking dish cut-side up.
Spoon the chicken mixture into the
zucchini boats. Sprinkle the zucchini evenly with the cheese.
Cover the baking dish with foil.
Bake for 35 minutes.
NOTE: SERVE HOT OR COLD
