Italian Turkey & Pepper Sandwich





It has been awhile. Here is an early or late holiday gift for you, a quick holiday snack/meal. This is a Weight Watchers recipe.

Prep Time: 15 minutes
Serves: 4


What You Need

2 Teaspoons extra- virgin olive oil.
4 Cups sliced sweet red and yellow bell peppers.
1 ½ Cup sliced onion.
3 medium garlic cloves, minced.
1 Teaspoon fennel seed.
1 Teaspoon dried oregano.
2 Cups Shredded cooked skinless turkey or chicken breast.
A couple of small tomatoes or cherry tomatoes. Sliced how you like.
Salt and pepper to taste.
A slice of your choice bread.
Garnish with fresh basil.

Instructions

Heat oil in medium nonstick skillet over medium / medium-high heat.

Cook peppers and onions, stirring occasionally, until golden. About 5 minutes.

Stir in garlic, fennel seed and oregano; cook, stirring after 30 seconds.

Add Turkey or chicken, toss to coat.

Add to skillet tomatoes, salt & pepper.  Cook until tomatoes are soft.

Toast bread, and add everything in skillet on top, garnish with basil.
